You need to get a license to go into the rice paddies and there is a season that is open and closed like a hunting season. The wild rice is actually in the grass family. It is roasted after picking, much like what the Native American Indians used to do on a campfire to make it suitable for long term storage. That is the extent of the processing. It is healthy for you and has a nutty taste. It is also a little crunchy if you cook it that way. It still needs to be washed before cooking. I think that this history adds to the flavor of the soup. A cream of chicken wild and wild rice soup recipe is just a little different in that you add some cream, half and half of course.
There are so many variations of wild rice soup. It is different every time that I make it. I have used leftover ham, turkey and chicken. I have made it vegetarian. I use mushrooms when I have them. I used different ingredients to make it creamy or not. One of the spices that I have recently experimented with is using curry in the soup. I have used both sweet curry and hot or spicy curry.
